Everyone, who is trying to eat healthier, has a story as to why they choose a style of eating. Mine choice usually is clean eating. So what is it? At its simplest explanation, clean eating is eating "real" foods. Those foods that are minimally processed or refined, in their whole state or as close to whole as possible.
But why clean for me? Why do I choose to eat this way? The simplest explanation is that I feel better when I eat this way. A few years ago, I was having a lot of joint pain, was tired all the time, and was getting headaches almost daily. After many trips to the doctor, without an explanation, I decided to try to eliminate certain foods out of my diet to see if I would feel better. What I found is my body has food sensitivities to corn (in all forms) and to gluten. Both of these sensitivities are self diagnosed, meaning I have not seen a doctor to verify these. However I do know that when I eliminate these foods from my diet, I feel better.
So, for the last few years, I have made most of my food from scratch. Corn is an ingredient in a LOT of food (even in over the counter medicine), so it is easier for me to make my own. With that being said, I am not perfect. Because these are sensitivities, often I choose to "cheat" and eat that bowl of popcorn, or have the battered cheese curds. The next day I feel my choices, usually in the form of joint pain, headaches, or an upset stomach.
Since Christmas, I have fallen into the habit of making bad choices, more often than not. I have started to feel the joint pain, the headaches, etc. more and more, so I need to make a switch. I need to jump back into clean eating so I can start feeling more like myself.
I am hoping you will join me in this journey and I hope to make the process easier for you by providing the meal plans I plan to use along the way.
