Most holiday dinners, when I was growing up, consisted of my Grandma's Sloppy Joes. To this day I can remember walking into her house on Easter or Christmas to the smell of Sloppy Joes cooking on the stove. Since her passing, my Dad has continued that tradition and has just about perfected her recipe.
Because I cannot eat gluten, and I have yet to find a gluten free bun that I love, I choose to eat this with potato chips, using them like the spoon. The salty crunch the chips give makes it so good!

This recipe results in a tomatoey (is that even a word?), veggie filled, slightly crunchy, Sloppy Joe goodness. Try it out for yourself to see what all the fuss is about.
Grandma's Sloppy Joe's
Ingredients
3 lbs. ground beef 1 (6 oz.) can tomato paste
1 stalk celery (about 8 ribs) 1 tsp. salt
1 medium to large green pepper pepper to taste
1 medium yellow onion 1/2 tsp. paprika
1 (28 oz.) can diced tomatoes Shake of crushed red pepper flakes (if you like a little spice)
1 (15 oz) can tomato sauce
Directions
1. Brown ground beef with salt and pepper-drain well
2. Chop celery, green pepper and onion finely.
3. Combined all ingredients (except tomato paste) in large pot.
4. Simmer on low about 1.5 hours, uncovered.
5. Add tomato paste the last 1/2 hour
6. Serve over buns or with potato chips and enjoy
